Minudaru is pickled pork belly with black sesame and miso. It was one of the dishes served as a celebratory dish at the court of the Ryukyu Kingdom. Pork belly meat is marinated with granulated sugar, soy sauce and awamori and then steamed topped with ground black sesame. It is a rare and elegant dish.
